Bring your summer into winter with herbal confetti!



 Colorado summers are miserable for this old lady. 
The heat is brutal to me, the dog, and the garden. Tomatoes have stopped setting blossoms, so what we have is what we get, unless we are very lucky.

Smoke from fires when the entire world is on fire is off and on again filling the air, turning the sun and the moon deep red-orange and the sky grey. 

But the produce - the fruit, the veggies, and the herbs! I make my way outside after the sun has slipped behind the foothill that sits to the west. This time of year, the brutal stabby orb slides away between 5 and 6 p.m. Most days the heat abates noticeably as our humidity is usually in the 20% and under. I just fact checked myself - the apps say this exactly "18% humidity Higher than yesterday"

But today, let's talk about Herb Confetti!

Most nights, when I cook, I run out and grab a big handful of herbs and another handful of kale.


 
 I chop everything up and throw a bunch into whatever is in the pot for the freshness and yum.



I leave whatever is left on the cutting board to dry. Once it's dry, it goes into a jar on my spice cupboard. 



In the depths of winter, the fresh dried herbs create a fiesta in winter foods and evoke the summer past.
